For the anatomical data, untar it with:

cd $SUBJECTS_DIR
tar xvfz fsfast-tutorial.subjects.tar.gz

For the functional data,

cd /place/for/data
tar xvfz fsfast-tutorial.tar.gz 

This will create a directory called fsfast-tutorial. Create an environment variable for this directory:

cd fsfast-tutorial
setenv FSFTUTDIR `pwd`
